The salad is complex, but the recipe really quite simple! When you start keeping ingredients, like cooked beets and cooked sweet potatoes, in the fridge, it makes whipping this up easy. I love this dish because there is no right or wrong way to make it as long as you like it. Add some extra raisins for a sweeter salad, add some more coriander for a herby salad, add some more beets for a beets-based salad – you can’t lose!
- Black lentils (cooked)
- Sweet potatoes (cooked)
- Beets (cooked)
- Herbs (parsley or coriander leaves, fresh)
- Pistachio nuts
- Feta Cheese
- Olive Oil
