Whole Chicken Lemon Recipe

  • Whole chicken (with fat)
  • 4-5 medium lemons
  • 1-2 lbs carrots (1 kg)
  • 2 cups orange or pineapple juice
  1. Preheat your oven to 425 F (220 C).
  2. Peel and cut the carrots.
  3. Cut the lemons into chunks and stuff the chicken with them.
  4. Using the chicken fat, close the chicken.
  5. Place the carrots into a large baking pan and put the chicken on top of them.
  6. Slice lemons thinly and cover the chicken.
  7. Add 2 cups of juice (orange or pineapple) to the pan - or more juice if your pan is particularly large. There should be about 2 fingers of juice in the pan at least.
  8. Bake in the oven until the chicken is done - this means it's 160 F (72 F). Use a thermometer or your own experience.
