A quinoa salad doesn't have to be boring or difficult to make. This quick and easy quinoa salad with greens, beets and berries is full of nutrition and looks beautiful!
  • 1 cup quinoa (cooked)
  • ½ cup shredded beets
  • ½ cup chopped berries
  • 2 cups chopped greens (lettuce & cucumber)
  • 3 Tbsp balsamic dressing
  1. Combine all ingredients.
  2. Add dressing.
  3. Mix well and serve!

TIPS ON BEETS: One great thing about this recipe is that it uses raw beets. Cooking beets is messy, time consuming and often keeps me from using them. By shredding the raw beets thin and then mixing them in with the sweet strawberries and the tangy balsamic dressing, their sometimes-overpowering flavor gets toned down. Get all of the beet nutrition without the beet mess and prep time by shredding them thin!
