  • Swiss chard
  • Fresh mushrooms
  • 3 Shallots (small)
  • Olive Oil
  • Salt
  • Pepper
  • Fresh lemon juice
  • Parsley
  • Pre-cooked red quinoa
  1. Chop, rinse, and dry your chard. A lettuce spinner does this well.
  2. Dice the shallots.
  3. Slice the mushrooms.
  4. Heat your oil and once it's hot add the shallots and mushrooms and reduce heat.
  5. Add the Swiss chard and cook until the leaves soften.
  6. Add the pre-cooked quinoa.
  7. Salt, pepper, and lemon juice to taste.
  8. Garnish with freshly chopped parsley.
