Vegan Lentil Salad with Cumin

Vegan recipes are not boring or flavorless, they just require a bit of creativity – and spice! Cumin, which originates in the Eastern Mediterranean and India, is a flavorful, healthy and easy-to-use spice that adds complexity to any vegan dish. You can find it in spice mixes, like curry, sofrito, garam masala, baharat, and many more, but plain ground cumin is tasty too.

Carrots, Sweet Potatoes, Zucchini and Cumin Recipe

  • 6 cups cooked black lentils (cooked)
  • ½ medium onion
  • Sweet potatoes (1 medium)
  • Zucchini (a few)
  • Carrot(s)
  • Salt (to taste)
  • Pepper (to taste)
  • Olive oil
  • 2 Tbsp ground cumin
  1. Pre-heat your oven to roasting temperature and make sure to have the lentils cooked already.
  2. Peel and cut the zucchini, carrots, and sweet potatoes coarsely (the zucchini should be smaller than the potatoes).
  3. Slice the onion into thin slices, so it will caramelize when roasted.
  4. Put the veggies and onions on baking paper and cover them in olive oil, a sprinkling of salt and pepper to taste. Cover the veggies with 2 heaping teaspoons of ground cumin and mix well using your hands.
  5. Roast the vegetables until the sweet potato is soft (varies by the type of potato, its ripeness and your chosen roasting temperature).
  6. Mix the lentils and roasted veggies together, adding a sprinkle of olive oil.
